Christmas Mug Cake
Preparation Time : 30 mins
Baking Time : 5 mins
Ingredients-
Refined flour – 150 grams
Baking soda – 1/2 tea spoon
Castor sugar – 100 grams
Refined Oil – 60 ml
Honey - 4 table spoon
Chopped dried Fruits – 1/2 cup (Raisins / Dates / Cranberry / Cherry / Apricots / Tutti Fruity)
Chopped candied ginger - 2 table spoon
Unsalted nuts – 2 table spoons (Walnut / Pistachio / Almond)
Cinnamon powder - 1 tea spoon
Nutmeg - 1/4 piece grated
Clove powder - 1/2 tea spoon
Spiced Dark Rum – 125 ml
Method
Mix chopped fruits with spices in a bowl. Add rum and allow to steep for atleast 48 hours.
Once ready to bake, in a clean mixing bowl, sieve refined flour and baking soda, mix well.
Add mix in castor sugar, oil, honey and mix well.
Stir in soaked fruits. Do not add the alcohol (this would dilute the cake batter)
Take a microwave mug and grease it with melted butter.
Pour the batter in, fill only 3/4 cup.
Microwave the mug cake for 5 mins on medium.
Once done, allow it to stand and cool a little for 5 minutes.
Serve warm with vanilla ice cream.
Or refrigerate and allow to cool completely for a cold cake.
